Having watched two diiferent movies based on the passion for cooking good food (Chef and Julie and Julia), I was influenced enough to try dishing up something new for dinner. After taking stock of the things available in the fridge, and spending a fair amount of time googling, I decided to go for a salad with broccoli as the principle ingredient. I used a modified version of the recipe here for the purpose. I now present my version of Broccoli Salad with Raitha recipe here.
- 200 g beans finely chopped (if possible, cut each piece furtther into two)
- 1 head of broccoli, cut into florets
- 2 tsp sunflower oil
- 2 tsp black mustard seeds
- ½ tsp dried chilli flakes (there is no need to use actual chilli flakes – take 3-4 red chillies and cut into small bits)
- 100 g frozen or fresh peas
- 3 large carrots, finely chopped
- small amount of corriander leaves
- Salt to taste
- 200ml yoghurt\curd (Add little water and hand blend to make a good consistency)
- ½ cucumber, peeled and finely chopped.
- ½ tsp cumin powder
- chopped mint leaves – small amount
- pitta bread / any other bread to serve
- Salt to taste
- Microwave the carrots, peas, beans and broccoli in a small amount of salted water for about 15 minutes. If using a pressure cooker, cook upto a single whistle. (Note – This cooks the vegetables well and causes less problems for those of us with a soft stomach).
- In a pan, add the oil mustard and chilli flakes and toast until fragrant in medium heat. Drain excess water from the cooked vegetables above and add to the pan.
- Turn off the heat and mix well. (Note – Watch the heat at all times – even a small amount of burning destroys the taste).
- Combine all the ingredients together in a bowl. Add salt to taste and mix well.
Serve the salad hot with a serving of raitha and a bread of your choice. In my preparation, I also added a couple of Cauliflower florets (this can be seen in the picture) – this is optional and need not be added!
Admittedly, this is a very simple recipe and requires minimum culinary skills. Nevertheless, this is a start and I hope to do better in the future!
